Pumpkin Crumble Cake pudding

Ingredients:
- 16oz Tortuga Golden Original
- ¾ cup heavy cream
- 8oz pumpkin puree
- 2 eggs
- ½ cup milk
- 1 teaspoon vanilla
- ½ teaspoon nutmeg
- ½ teaspoon cinnamon
- 1 pinch salt
For the Crumble topping
- ½ stick salted butter cold
- ½ cup flour
- 1 teaspoon cinnamon
- ¼ cup brown sugar
Directions:
- Preheat the oven to 350 degrees F
- Cut the Tortuga golden original cake into 1 inch cubes and place in a baking dish.
- Blend together, cream, pumpkin, eggs, milk, vanilla, nutmeg, cinnamon and salt.
- Pour the mixture over the cake cubes, toss lightly to ensure all the cake is coated.
- Cut the cold butter into cubes.
- In a food processor, blend together the butter, flour, cinnamon and sugar until it resembles breadcrumbs.
- Sprinkle the crumble all over the soaked cake, make sure to cover the cake completely.
- Bake in the oven for one hour.
- Remove from the oven and allow it to cool before serving, as it cools the pudding will set and the crumble will get crunchy.
