Tortuga Pumpkin Crumble Cake

Pumpkin Crumble Cake pudding

  • 16oz Tortuga Golden Original
  • ¾ cup heavy cream
  • 8oz pumpkin puree
  • 2 eggs
  • ½ cup milk
  • 1 teaspoon vanilla
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • 1 pinch salt

For the Crumble topping

  • ½ stick salted butter cold
  • ½ cup flour
  • 1 teaspoon cinnamon
  • ¼ cup brown sugar


  • Preheat the oven to 350 degrees F
  • Cut the Tortuga golden original cake into 1 inch cubes and place in a baking dish.
  • Blend together, cream, pumpkin, eggs, milk, vanilla, nutmeg, cinnamon and salt.
  • Pour the mixture over the cake cubes, toss lightly to ensure all the cake is coated.
  • Cut the cold butter into cubes.
  • In a food processor, blend together the butter, flour, cinnamon and sugar until it resembles breadcrumbs.
  • Sprinkle the crumble all over the soaked cake, make sure to cover the cake completely.
  • Bake in the oven for one hour.
  • Remove from the oven and allow it to cool before serving, as it cools the pudding will set and the crumble will get crunchy.
