Tiramisu “no bake” cheesecake

Ingredients:
- 16oz Tortuga Blue Mountain Coffee cake
- 1 cup heavy cream
- ¾ cup white sugar
- 24oz cream cheese
- ¼ cup sour cream
- ¼ cup cacao powder
- 1 teaspoon vanilla
- 1 tablespoon instant coffee powder
- 2 tablespoons cacao powder
Directions:
- Preheat the oven to 350 degrees F.
- Crumble the coffee cake place in a spring form pan and press against the bottom and sides to form a crust.
- Place the cake crust in the oven and bake for 15 minutes.
- Remove from the oven and set aside to completely cool.
- In a bowl whisk together the whipped cream until it forms still peaks.
- In another bowl cream together the cream cheese and sugar until smooth, sift in the cacao powder.
- Add the sour cream and vanilla and lastly fold in the thick whipped cream.
- Pour this mixture into the cooled cake crust and place in the refrigerator overnight.
- Chilling in the refrigerator will allow it to set.
- Once it is set mix 1 tablespoon instant coffee powder with 2 tablespoon cacao powder.
- Using a sift, dust this mixture overtop the cake.
- Slice and serve.
