Strawberry Lemon Coconut Trifle

  • 2 4oz Tortuga Coconut rum cake
  • 1 cup prepared instant lemon pudding
  • 6 fresh strawberries  
  • ¼ cup strawberry jam

You will also need:

  • 2 dessert glasses


  • Prepare the instant pudding and set aside in the refrigerator to firm up.
  • Remove the stems from four of the strawberries and slice them up set aside the remaining two strawberries whole to garnish.
  • Slice the coconut rum cake into ¼ inch slices take 2 slices and crumble to make cake crumbs.
  • Start layering the dessert by adding a dollop of lemon pudding followed by fresh strawberries, a slice of coconut rum cake, and strawberry jam, repeat the layering until the cup is filled.
  • End with lemon pudding and sprinkle all over top coconut rum cake crumbs and top with the whole strawberry.
  • Place in the refrigerator for 30 minutes to chill before serving.
